All we had to do was remove a few (now default) settings from main.cf. This page: http://www.postfix.org/COMPATIBILITY_README.html and the release notes: ftp://ftp.reverse.net/pub/postfix/official/postfix-3.0.1.RELEASE_NOTES should cover it.
