I'm rebuilding my gentoo. I liked having the update-grub script polish off
kernel installs, but I cannot seem to locate it.
Somebody who has it please tell me what package it's in.

As far as i known this script is debian specific. So I don't think you
will find it in any package.
But I also don't see what it's good for. What do you mean with
'polish'? I have to entries in my grub.conf: One pointing to
/boot/vmlinuz the other poiting to /boot/vmlinuz.old (and related
symnlinks).
There's no need for any modification after updating the kernel.
