you can put systemrescuecd on an usb stick. There is an easy howto. Short 
version: just use the script. Long version: mount the iso and copy the stuff. 
Edit a file. You are done.

Really, systemrescuecd is the best choice. It is based on gentoo, it is small, 
so there is a lot of room for other stuff, it has support for a wide range of 
filesystems and all the apps you need. Even working X and firefox.
