If you don't want a 64-bit kernel (and therefore no 64-bit applications), you can go the 32-bit route and use the (i[[:digit:]]|x)86 liveCD and stage. I don't recommend this, but it may be preferred if you use software that is (a) non-portable (and not ported) or (b) only available in binary form (non-Free).
