Obviously my view wasn't as sophisticated or detailed, but in essence,
being a newbie, I felt the risk of that was too great. Hence wanting to
use the newer version to upgrade some key packages.
I'm going to play with gentoo some in a vmware instance so I can get
some idea of this emerge/compiling thingy :-)

I would recommend re-installing with pure Gentoo:
it's not difficult, but it does take a bit of time & attention.
Read the installation docs carefully & follow them to the letter.
Then you will have a properly functioning Gentoo box,
which you can keep as upto-date or super-stable as you prefer,
& you never need to do another installation. Otherwise,
choose one of the pure binary distros, which are best for most Linux users.
