emerge the packages I've listed above.

You are missing control-center here, emerge it.
( control-center-1.4.0.5 ) see above as well.

Yes it is possible, I'm currently writing this e-mail using Evolution
(it requires gnome1) on a gnome2 desktop, using many other gnome1 apps
as well.
