Did you do export PKGDIR=/mnt/cdrom/gentoo/packages to make sure that Portage knows where to find the binary dependencies? As for all of the grub problems, I'm not sure. I make it a point of running through the install directions and the Desktop guide every time I reinstall Gentoo, just to make sure that things are still working, and I've had no problems with grub. I may have missed something, however. You might want to look at the grub tutorial at http://www-105.ibm.com/developerworks/education.nsf/linux-onlinecourse-b ytitle/0F1731DC664023B7862569D0005C44AF?OpenDocument. It's very good.
