By default there are no services started during the install. At least, I
couldn't see any when I nmapped my box (from another one) during the install.

No, not by default.

distfiles is the directory where source files for everything are downloaded and
stored. gentoo-sources is the ebuild for the kernel source plus some gentoo
performance patches.
