  Can I copy :
- postfix-1.1.8.ebuild TO postfix-1.1.11.ebuild
- postgresql-7.2-r2.ebuild TO postgresql-7.2.1-r1.ebuild
- proftpd-1.2.4-r7.ebuild TO proftpd-1.2.5rc3-r1.ebuild (appending rc3 
will cause an error if I remind correctly)

  Then ebuild digest (I know... ;).

  And finaly emerge these packages without causing a *major* breakage 
with the future packages (ie when these releases or newer ones get 
integrated into gentoo) ?

Why you can do that... you will just have to watch when official gentoo 
ones are released and remerge them... however what I recommend you do is 
copy them like you say, and then test compile them and then submit the 
ebuilds under their new name to bugzilla so that they get into portage 
proper asap.
