Just an FYI :
1.  It still list the ${ROOT} even though we chroot now.
2.  In /etc/fstab the /boot entry is set to 'noauto' for mounting.

OK, in a few places... I'll fix that now.

That's correct, you don't need to have /boot mounted to boot your
system.  GRUB loads the kernel off of it directly, and keeping it
unmounted protects your kernel.
