What's a quick and easy email solution? Basically need to accept mail
for one domain and serve it up to a private network. Simple!
Pop server + sendmail? Courier? Qmail? What's an easy solution? Need
something to get up and going fast, and I have no problem using an
ebuild.
Any suggestions? Wouldn't mind an imap server so I could hook up a nice
webmail service up to it, but it's not a requirement.

Hi!
I would go with Postfix+Courier IMAP+procmail.
Use Postfix to accept/send mails, use procmail to sort them and access
them through Courier IMAP.

i was lucky getting a static ip for my DSL, so i got qmail runing with one line in one file !
which is my domain name in the file /var/qmail/control/me
and the lines for pop3 and smtp are aleady in the startup scripts ...
you should check it out, as qmail is THE most secure mail server ever ! we use it here on whole datacenters !

Just make shure you put your domain in the rcpthosts - if you leave it blank spammers can (and i discovered, will even if it's just some obscure box in some far away corner of the 'net) use your box to send emails... "I'll fix that with some sort of clever authentication when i get around to it one of these days..." really dosn't work there :)
on a more relevant note I just came accross a guide at http://www.dulug.duke.edu/~icon/qvcs-guide/ which looks like it may be just what you're looking for. I currently run qmail and courrier Imap (only SSL connections allowed to IMAP so pw's aren't sent in plaintext) on an OpenBSD box so if you get stuck drop me an email and I might remember how to set it up :)
