Anyone knows of projects that uses catalyst to build a livecd for running an 
apache server?

I don't, but it would be relatively easy to do. Just add apache to 
livecd/packages in livecd-stage1 and add it to the default runlevel in 
livecd-stage2. You can then use the livecd/root_overlay or livecd/fsscript 
options to throw in some custom configs and htdocs.
