well, just removing ~amd64 from your make.conf and eselect profile set
default-linux/amd64/2007.0 and then emerge -uDNvp will let you see what
would compile.
if you instead want to rebuild from scratch then funtoo has recent compiled
stages that would let you not compile a lot of updated stuff.
